Pineapple Bacon Muffins

Osterizer 1955

  • 3 strips of bacon

  • 1 cup sifted flour

  • 1 teaspoon baking powder.

    3/4 tsp baking soda

  • ¾ tsp salt

  • 1 cup cornmeal

  • ½ cup crushed pineapple (drained)

  • 2 eggs

  • 1 ½ cups buttermilk

  • 2 tbsp brown sugar

  • ¼ cup bacon drippings

Heat oven 425. Grease muffin tins. Fry bacon until crisp.

Sift flour baking soda and salt into a mixing bowl. Add cornmeal, pineapple.

Put buttermilk, sugar and drippings into the OSTERIZER container, cover, process and MIX until smooth. Pour into flour mixture and stir only until flour is moistened.

Fill prepared muffin tins 2/3 full. Crumble crisp bacon on top.

Bake or 20-25 min.

Yields 12 muffins
